Homemade Strawberry Popsicles

We make strawberry popsicles all the time.

My kid loves ice cream and I really don't want him to eat too much of that sugar-laden unhealthy store-bought stuff.

Therefore we bought those plastic ice pop molds and they're in constant use :-)

This is the easiest ever homemade popsicle recipes. It takes  less than 10 minutes to prepare.

Freezing though, takes quite a while, especially if you use the recipe with milk. I usually prepare them in the evening and freeze the ice cream over night.


Ingredients

  • 15-20 medium sized strawberries
  • 1 cup water or milk
  • sugar (optional)


Directions

For this recipe you need ice pop molds. I like the hard plastic ones like in the picture above, but my neighbour swears by the soft silicone ones. Either one will work.


Wash strawberries and remove the stems. Then put them into a blender and add water. Blend until smooth. Depending on the consistency of the strawberries you might want to add more water.

Instead of the water you can also use 1 cup of milk, then you get cream milk ice cream, instead of the more refreshing fruit water ice.


I usually don't add sugar and my son and I don't mind. But my husband thinks the ice cream popsicles without sugar are too sour. Therefore I also make a batch for him with 2-3 teaspoons of sugar.


Add the sugar into the blender and blend again.


Fill liquid into ice pop molds almost up to the top. Leave just a bit of empty space to make room for the plastic stick that will be put inside.

Close the lids of the ice cream molds and put into freezer for at least 12 hours.
