This salad recipe has amazing springtime colour and flavour.
A delightful taste sensation!
1/4 cup lemon juice
2 tbsp. vegetable oil
2 tbsp. honey
1/4 toasted, slice almonds
2 cups fresh asparagus spears, cut into 1 inch pieces
2 cups fresh strawberries, sliced
In a jar, with a tight fitting lid, combine all the above dressing ingredients. Shake well.
Partially cook the asparagus in rapidly boiling water for 3 to 5 minutes or until crisp tender, and then drain well. Rinse with cold water.
Arrange the asparagus and strawberries on 4 individual salad plates.
Drizzle with the dressing!
