Strawberry Spinach Salad with Mushrooms

With this strawberry spinach salad recipe you can convince your family, that spinach is actually yummy!

I won't repeat all the stuff why this veggie is so healthy. We all know that we should eat more of it. And what is better than to combine the useful with the enjoyable?

Sneak in the healthy spinach while your family thinks they're eating strawberries.
You can add more berries if you wish, depending how sweet you salad shall be.

Strawberry Spinach Salad with Mushrooms. Yummy and healthy.

Ingredients

Salad

  • 2 bunches spinach
  • 4 cups sliced strawberries
  • 1 cup mushrooms

Dressing

  • 1/2 cup olive oil 
  • 1/4 cup white wine vinegar 
  • 1/4 teaspoon paprika 
  • freshly ground black pepper

Directions

Rinse spinach and tear into bite-size pieces. I always use the stems as well, but not everyone likes them.

Cut strawberries and mushrooms into quarters.

In a large bowl, toss together spinach, mushrooms and strawberries.

Mix oil, vinegar,  paprika, and pepper in a small bowl to make the dressing. Pour over your salad just before serving.

Ingredients

Salad

  • 2 pint container of fresh Strawberries (more stawberries if large package of spinach used)
  • 1 package spinach

Dressing

  • 1/2 cup sugar 
  • 1/2 cup vinegar
  • 1/2 cup olive oil
  • 2 tablespoons Sesame seeds
  • 1 tablespoon Poppy seeds
  • 1/2 teaspoon minced onion
  • 1/4 teaspoon Worcestershire sauce
  • 1/2 teaspoon paprika


Directions

Make sure stems are removed from spinach, as they will make the salad bitter.

Strawberries should be cut in half but I have seen them left whole.

I use olive oil but any oil will do. I add 4 green onions chopped finely in place of minced onions.

I do not put in sesame or poppy seeds as denture wearers complained they caused problems.

Remove stems from spinach and tear into salad size pieces. Cut strawberries and mix with spinach.

Just before serving add dressing. Extra dressing can be stored for at least a week.
