Chilled Strawberry Soup

Strawberry Soup? Sounds a bit strange, doesn't it?

I thought so too, at first, but after trying the strawberry soup, I was delighted.

It's a fantastic dessert for kids and adults alike and a great refreshing "goodie" during summer.

The best about this easy recipe is, it'll work with fresh and frozen strawberries!

No need to wait til strawberry season.

Easy Strawberry Soup

Ingredients

  • 1 1/2 pounds (1200g) fresh or frozen strawberries
  • 1/4 cup (75 g) vanilla yogurt
  • 1 pint (500 g) cream
  • 1/2 teaspoon vanilla

Directions

Blend strawberries in blender until smooth. Slowly add vanilla yogurt and keep blending.

Pour strawberry mixture into large bowl. Add cream and vanilla and stir until blended.

Chill in fridge for at least 1 hour.

Before serving garnish with a fresh strawberry or a mint leave. Serve in soup bowls.

Low Fat Strawberry Soup

This recipe uses plain (light) yogurt instead of cream. It still tastes yummy, but is much lower in fat and calories.

Ingredients

  • 1 1/2 pounds fresh or frozen strawberries
  • 1 pint (500 g) plain yogurt, or yogurt light
  • 1/2 cup (125 ml)orange juice
  • 1/2 cup (125 g) white sugar
  • 1/2 cup (125 ml) water
  • 1/8 teaspoon ground cardamom

Directions

Blend strawberries in blender until smooth. Slowly add yogurt and keep blending.

Pour strawberry mixture into large bowl. Add orange juice, sugar, cardamom, and water and stir until blended.

Chill in fridge for at least 1 hour.

Before serving garnish with a fresh strawberry or a mint leave. Serve in soup bowls.
