Strawberries are at their best now. You can get them everywhere, sweet and delicious.

Did you know, that strawberries are very healthy? They contain plenty of antioxidants, vitamin C, folate and others. One more reason to eat as many as possible :-)

If you liked the Strawberry Tiramisu Recipe presented in Issue 40, you'll love this one even better. At least I do !


Strawberry Tiramisu with Ricotta cheese

Obviously I prefer this Tiramisu with strawberries, but you can substitute them with raspberries or blackberries. Both variation are simply delicious !

Ingredients

  • 1/2 cup (125g) lady finger biscuits
  • 1 cup espresso coffee
  • 2 cups (500g) fresh strawberries
  • 1 cup (250g) Ricotta cheese or cream cheese
  • 1 cup (250g) Mascarpone
  • 1/2 cup (120ml) whipped cream
  • 1/2 cup (125g) sugar, white or brown
  • 1 package vanilla sugar
  • cocoa to sprinkle

Directions

Soak lady finger biscuits in espresso and cover bottom of baking form. Leave for 20 minutes.

Wash strawberries and cut into halves. Keep a few berries for decoration.

Mix Ricotta or cream cheese, Mascarpone, vanilla, sugar and whipped cream with an egg whip.

Coat the biscuits with half of the cream mixture, put strawberries on top. Then coat with the rest of the cream mixture.

Cool at least 4 hours in refrigerator.

Before serving decorate with the remaining strawberries and sprinkle with cocoa.

Kitchen Tips

When freezing or making jam, consider these tips for better results:

* Choose only perfect fruit and berries. Overripe or damaged fruits should be eaten immediately.

* Make sure your jars, lids and sealing rings are clean. Preferably wash them in the dishwasher just before using.

* Wash your produce thoroughly before processing.

* Check the seal on every jar to make sure they are air tight.
