because it was raining so much the last weeks, my second harvest of self-grown strawberries was very small. Most of the berries had started to rot already before turning red....
Anyways, I found some in the supermarket, which is rather unusual outside strawberry season, and I couldn't resist to buy them :-)
I'm sure you'll like my Tiramisu recipe!!
I love Tiramisu! Therefore at first I was a bit reluctant to mix it with my favorite berries. It was fantastic! Try for yourself:
- 1 cup (250 g) strawberries, fresh or frozen
- 2 cups (500 g) Philadelphia cheese
- 1 cup (250 g) yoghurt
- 2 tablespoons lime juice
- 4 tablespoons sugar
- 1/2 cup (125 g) lady finger biscuits
- 1/2 cup (125 ml) orange juice
Unfreeze the strawberries, or wash and dry if you use fresh ones.
Mix Philadelphia cheese, yoghurt, lime juice and sugar thoroughly in a blender.
Soak half of the lady finger biscuits in orange juice and spread into a 10x5 inch (25x11 cm) baking pan.
Spread half of the cream mixture on top of it, then a layer of strawberries.
Add another layer of lady finger biscuits soaked in orange juice and finish with cream mixture.
If you wish you can add cocoa powder or serve immediately.
Makes: 6 servings
