Can you believe we're already two month into the (not so) New Year? Time definitely runs fast....
Last week they offered the first strawberries of the year in my supermarket around the corner. I was tempted to buy them, but finally I didn't. It's always a disappointment for me to buy the imported strawberries, which have been picked green and ripened during transport to my supermarket! They just don't have any taste at all.
But they reminded me of a terrific recipe I have and which you can also make with frozen strawberries.
Strawberry Cream Cocktail
This super delicious strawberry dessert can be made with or without alcohol. I prefer it without, but you can just add a small cup of vodka to make it an adult party dessert.
- 15 ounces ricotta cheese
- 1/2 cup mascarpone or sour cream
- 1/4 cup sugar
- 1/2 cassis
- 1 pint strawberries, hulled and sliced
- 1/2 cup blackberries
Pour ricotta cheese, mascarpone and sugar into a blender and blend until smooth.
Spoon 2 tablespoons of cassis into the bottom of dessert dish or cocktail glass. Top each with a layer of the cheese mixture you made.
Serve immediately or cover with plastic and chill in the fridge until serving time.
Before serving, mix together the strawberries and blackberries. Spoon over cheese mixture in each dish and serve.
For a really stunning looking dessert, use elegant cocktail glasses for serving.
