Strawberry Recipes, Issue #64 - Strawberry Rice Dream May 13, 2010 |
The Ezine For Every Strawberry Lover!May 13th, 2010 Issue #64 Hello, after this long, hard and cold winter (at least in the Northern Hemisphere), the spring is such a relief to everyone. Even though in my garden, plants are still behind the normal season, the strawberries already blossom and soon I'll be able to harvest my favorite fruits :-) Meanwhile strawberry time has started and you can get them in most of the supermarkets. We tried a new recipe that's a delight for everyone who loves rice pudding.
Strawberry Rice Dream A delightful variation of the good old rice pudding.
Ingredients
Directions Bring milk to a boil and slowly pour in the rice, while constantly stirring. Add 3 tablespoons sugar and the pulp of the vanilla bean.. Simmer rice for another 30 minutes with low heat and stir everyy few minutes. Let finished rice pudding cool down. Wash and hull strawberries. Set aside a few berries for decoration and puree the rest of them. Add 1 tablespoon sugar and strawberry liquor. Mix rice pudding and yogurt. Press mixture lightly into 4 forms. Portion strawberry sauce onto 4 plates and dump rice mixture on top of it. Decorate with whole strawberries and lemon balm.

* Add a tablespoon of oil to the water when cooking rice so the grains stay separate and don't stick together. * Never stir rice while it cooks because it will crush the rice grains and make the rice gummy (this is why you stir rice pudding)
