Hello,

Time is passing by so quickly, I wanted to write this newsletter to you for the last two weeks, but somehow something always came up.

Anyways, I hope you are enjoying the spring/summer season and waiting as anxiously for the strawberries to ripen as I do :-) Meanwhile you can at least have strawberry look-alikes with the recipe below.

We already have lots of green fruits in my garden and this year I'll be defending them relentlessly against the birds!!


Candy Strawberries

The Candy Strawberries Recipe is perfect to prepare together with your kids and spend some fun time with them. Eating the candy strawberries of course, will be even much more fun :-)

Ingredients

  • 2 large size boxes Strawberry Jello
  • 1 can (375 ml) Sweetened Condensed Milk
  • 1 cup (250g) Slivered Almonds
  • 7 ounces (210g) grated coconut
  • Green Food Coloring
  • 1/2 cup (125g) Red Sugar Crystals

Directions

Blend jello, coconut and sweetened condensed milk together in a bowl.

Mix almonds with food coloring and set on paper towel to dry.

Pinch off small amount of jello mixture and roll into a ball. Then make one end smaller than the other one and pinch smaller end flat (kind of pyramid shape with rounded edges).

Roll in red sugar and stick green almond in flat end. Looks like real strawberries.

Extra tip: The jello mixture is easier to work with if you cover it and refrigerate it for several hours.

Kitchen Tip

How to hull strawberries

Hold the strawberry in one hand, and insert the tip of a paring knife with the other one, slightly angled toward the center, close to the leaves.

Gently cut all the way around; pull out the stem end and core.
