today when I woke up and looked out of the window, it was snowing! The snow won't stay, because it's still above freezing point, but it still is the first snow this year!

This always reminds me of my childhood, when we would run outside and play with the snowflakes :-)

The first snow of the year always puts me "officially" into Christmas mood and therefore I felt like something sweet and warm for breakfast.

These Strawberry pancakes are easy to make and a delight for young and old.


Strawberry Pancakes

These pancakes have the strawberries in the batter, top them with strawberry jam or syrup for a double dose of your favorite berries.

Ingredients

  • 1 cup (250 g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • 1 1/4 (300 ml)cups buttermilk
  • 1 egg
  • 2 cups (500g) sliced strawberries
  • 2 tablespoons butter

Directions

Combine flour, baking soda, sugar, and salt in big bowl and mix thoroughly.

Melt butter and wisk together in another bowl with buttermilk and egg.

Add the flour mixture into liquid and stir until smooth.

Heat pan over medium heat and coat with butter or grease. Drop 1/4 cup of batter into pan and spread. Then press a few strawberry slices into the pancake.

Fry until bubbles form and the bottom is browned lightly. Flip and fry one minute more, until pankcake is done. Repeat with next one.

Serve immediately or keep warm in the oven and enjoy your strawberry pancakes!

Can be served with sugar, syrup, jam, cream.....

Makes: 12 servings
