Even if you're living in the remotest corner of the world, by now you probably have heard all the hype about the potential bird flu pandemic.

I have been watching it for a while now, particularly as I am currently located in China.

At the moment there is no need to panic as it has not mutated to a form where it can be easily transmitted to humans. Only very few people have been infected with the virus, all of them people that do live and work with birds.

In most countries government has taken measures to prevent further spreading of the disease. If you stay away from live birds, wild birds as well as domestic ones like chicken and ducks, then your chances to become a victim of the bird flu are minimal.

Avian flu is a special kind of flu and at this time there is no way to be 100% certain that you are protected against it. The best you can do is work on ensuring your general health is good, which will in turn strengthen your immunity.

Eat enough fresh fruit, vitamins, follow sensible diet and do reasonable exercise. There are however, additional natural substances that you can take which will improve your immunity further...at least against common flus and colds. But, they are of little use unless you have your immune system in good shape.

Taking vitamin supplements is always a good idea, especially in winter time. Personally, I like the which are truly excellent.


Strawberry Cinnamon Muffins

Ingredients
- 2 eggs
- 2/3 cup sugar
- 1/2 cup milk
- 1/4 cup plain yogurt
- 1 teaspoon vanilla
- 1/2 stick butter, melted and cooled
- 2 cups flour
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon cinnamon
- 1 1/2 cups strawberries, hulled and cut in chunks

Directions

Preheat oven to 375 degrees F. Grease mufin tins or line with paper cups.

In a large miing bowl, whisk together eggs and sugar until light. Add milk, yogurt, vanilla, and melted butter. Gently whisk.

In another bowl, combine flour, baking powder, salt, and cinnamon. Add to milk mixture and stir just until flour disappears. Gently stir in berries.

Spoon thick batter into muffin cups to the top. Bake about 25 minutes, until tster comes out clean. Invert and cool on rack.

Serves 12
